at the Österreichischer Jagdfalkenhof
In April 2024, six
organic beehives moved to the Austrian Falconry
Center.
Shortly thereafter, we had the first natural
swarms, which we were able to capture from our
apple tree and from the windbreak.
In August 2024, we were able to harvest our first
honey!
Since 2025 we are certified organic beekeeper
Our 2026 honey has
been harvested and contains a high proportion of
forest honey this year.
We
delight in perfectly capped honeycombs, which,
when uncapped, reveal a wonderfully diverse honey
that, when spun from the combs, appears like
liquid amber in the sunlight.
We
harvest honey only once a year, and not until
September. While this results in a slightly lower
yield—since the bees have often already consumed
some of the honey during spells of bad weather or
moved it down into the brood chamber for the
winter—it ensures that the honey we extract is of
exceptional quality.
Furthermore, our bees overwinter not just on sugar
water, but on their own healthy honey.
Due
to its very low water content, our honey
crystallizes readily; however, it can be liquefied
again by warming it gently.
